The name 'UKON' carries numerous positive meanings in Japanese mythology. Our preferred interpretation of the term relates to 'Tachibana No Ukon,' which refers to the Mandarin Tree that was symbolically placed on the right side of the Imperial Palace in Kyoto. This tree was said to balance the Cherry Blossom Tree on the left side, known as the 'Sakura No Sakon.' Together, these trees symbolically replaced the Samurai Guards who had previously defended the Emperor but were no longer deemed necessary during peaceful times.

The Global Ukon GU-04 Santoku Knife is a highly versatile knife suitable for chopping, slicing, and dicing a variety of vegetables, meats, and fish. The term Santoku translates to ‘three qualities’ in Japanese, which relates to the three fundamental prepping techniques mentioned earlier. The blade features a fluted edge that creates small air pockets during chopping, minimizing friction and preventing food from sticking.
